Spring is a season of renewal and rebirth, but we often feel tired and weak after the long winter months… if we need to get energy one of our best allies is food. Here you can see our dinner: first of all a big salad made with escarole, endive, corn salad, walnuts, radicchio and dandelion greens (picked up in the mountains), which are highly detoxing. Then, a veggie soup with azuki and mung beans (rich in vegetable proteins), buckwheat and brown rice, with a drizzle of olive oil. Tasty and complete.
We’ve been a few days off for the Easter vacations, choosing the Alps of southern Piedmont for our hikes on the snow. After two days of snowfalls, finally on Sunday we had a wonderful sky of blue.
We plunged into the white, walking and skiing under the warm springtime sun. Not that bad at all, don’t you think?! In photo 2, on the left: Rocca La Marchisa (3072 m), our goal.
